Traditional Dutch giant butter cookie/cake

Hi!

Ready for something special and utterly delicious!? This recipe is one of my favorite bakes when I was a child, but damn it is still very tasty. My boyfriend absolutely loves it and wanted me to bake one. However, there is another story behind it. We are students and were in need for more motivation in order to study. So we made some kind of bet, if one of us receives a grade of a 9.5 or higher the other one needs to bake something the one with the (approximately) 10  desires. Jordy recently got THREE tens and wanted a boterkoek (translates to butter cookie), a  traditional Dutch cookie/cake and I thought I would share the recipe with you!

Ingredients:

  • 300 grams butter (I know that is a lot, hence the name)
  • 100 grams granulated sugar
  • 100 grams caster sugar
  • pinch of salt
  • 300 grams of flour
  • 1 egg, beaten

You also need a traditional “boterkoek” pan or another type of baking pan that is round pan of 24 cm, but it should contain out of one piece! Otherwise when the butter melts it leaves an oily mess.. I learned that the hard way…

Method:

  1. Mix the butter with the two types of sugar and salt
  2. Kneed the flour with the butter mixture into a ball of dough
  3. Wrap the dough in plastic foil and let it rest for at least an hour
  4. Flatten the dough into the baking pan and even it out with a spoon
  5. Coat the top of the dough with the beaten egg
  6. Let it rest for another half hour and pre-heat the oven on 200 degrees celsius
  7. Coat the top of the dough again and then use a vork to make little diamond shapes into the dough
  8. Bake the dough for 20 minutes or until golden brown
  9. Let it cool so that the cookie/cake hardens
  10. Enjoy!!!
